Cottage Jackets
Ingredients:
1.25kg lean beef mince
250g leeks, finely sliced
150g celery, thinly sliced
1kg baked beans
60ml tomato ketchup
1-2tsp chilli or curry powder
250g canned or frozen sweet corn
10 baking potatoes
Method:
1. In a pan dry-fry the mince with the leeks and celery for 3-4 minutes until brown
2. Add the baked beans, tomato ketchup and chilli or curry powder and sweet corn. Simmer for 5-10 minutes.
To serve:
Serve the mince piled into the micro-waved or oven-baked jacket potatoes. Sprinkle with grated cheese if desired or pile into
the centre of flour tortilla wraps, roll up and eat. Serve with homemade coleslaw, extra sweet corn and salad.
Tip: Alternatively pile into the centre of flour tortilla wraps (1-2 per portion), roll up and eat.
