Steak Sandwich with Hot Red Tomato Relish
Ingredients:
10 x 100g lean minute or thin cut sirloin steaks
2tbsp sunflower oil
For the marinade:
250g plain natural yogurt
2 garlic cloves, peeled and crushed
2tsp paprika powder
2tsp English mustard
Salt and freshly milled black pepper
For the hot red tomato relish:
400g tomatoes, peeled, deseeded and finely chopped
1tbsp sweet chilli sauce
1tbsp hot pepper sauce, or to taste
2tbsp freshly chopped flat-leaf parsley
1tbsp tomato ketchup
4tbsp gin, optional
To serve:
Small bread rolls
Butter for spreading
Sliced red onion
Baby spinach leaves
Sliced cucumber
Method:
For the steaks:
1. Mix together the yogurt, garlic, paprika, mustard and seasoning. Spoon the marinade mixture over the steaks to coat both sides. Cover and marinate for 2 hours or overnight in the refrigerator.
For the hot red tomato relish:
2. Mix all the relish ingredients together and set aside.
3. Heat the oil in a large frying pan. Cook the steaks according to your preference. Cut the rolls in half and spread with butter.
To serve:
Add the steak and garnish with the red onion, spinach and cucumber. Finish with a spoonful of the relish over the steak.
